West Coast Cocoa Chocolate mousse recipe

1 tablespoon cold water
1 teaspoon gelatine
2 tablespoons boiling water
¼ cup West Coast Cocoa baking cocoa
½ cup castor sugar
1 cup cream
½ teaspoon Heilala vanilla bean paste

Rich and indulgent, this simple chocolate mousse will fast become a family favourite. And, it’s easy enough for the budding cooks in your family to make.


1. Sprinkle gelatine over cold water in a small bowl and let soften for 5 minutes. Once softened, add boiling water and stir well.
Let cool while preparing step 2.

2. Mix castor sugar and cocoa powder in a bowl. Add cream and vanilla paste. Beat until mixture forms stiff peaks (be careful not to
over beat at this stage).

3. Pour in gelatine mix and beat until well blended. Pour into one large or 5 small serving dishes.

4. Refrigerate for about 1 hour and garnish before serving.
