    Spice Chocolate Pikelets

    1 c flour

    1 tsp baking powder

    1 tbspn West Coast Cocoa dark hot chocolate powder

    1/2 tsp mixed spice

    1/4 tsp salt

    1 egg

    1/2 cup sugar

    3/4-1 cup Otis oat milk (or regular milk)

    Sieve the flour, baking powder, hot chocolate powder, mixed spice and salt into a bowl.

    In a separate bowl whisk the sugar and egg until well mixed.

    Add the combined sugar and egg mix with about 3/4 cup of milk. Mix until just combined. Add more milk if needed to make a dropping consistency.

    Heat a frying pan and add a little butter or non-dairy spread to grease the bottom. Drop dessertspoons of the mix into the pan.

    Once bubbles appear in the cooking mix turn once and finish cooking the other side.

    Turn onto a cooling tray to cool.

    For Easter, the mix can be dropped to create bunny head shapes, with one large drop for the head and then two thin strips spread to create bunny ears.

    Enjoy with a cup of hot chocolate.
